Clarified butter is made by removing the water and milk solids immediately after melting. Ghee is cooked longer, allowing the milk solids to brown before going through a filtration process. Ghee tastes like butter, but better. It has a rich, deep flavor that regular butter lacks due to the browning of the milk solids during preparation. Because of this, it has a subtle, toasty flavor that elevates both savory and sweet dishes. Ghee is rich in medium-chain triglycerides (MCTs) and can be a friendly fat for low-carb, ketogenic, Paleo and Whole 30 lifestyles.
